It's a Thanksgiving Tradition!

Just as in past years I've made a Tofurky roast to bring over to Mom and Dads for Thanksgiving dinner.  This year I also tried a new recipe for vegetarian gravy I found online since I couldn't find the vegan gravy mix I've used in the past.

I found the "Vegetarian Gravy" recipe on allrecipes.com.  It had really good reviews and I had all of the ingredients on hand so it was a good fit.

Here are the ingredients all ready to go.  I added chopped mushrooms to the mix because I had them in the fridge.

I ended up needing to add about an extra cup of broth to get the consistency right.  It's really tasty and a little chunky with the veggies, which is how I like it.


Then it was time to get the Tofurky into the oven.  I like to make it with roasted carrots and onions.


 Add the baste and it's ready to get roasted!


This will be a fantastic dinner along with vegan stuffing and horseradish mashed potatoes!  Yum!
